Epic Rocky Road!!

One of our favourite creations... a sticky slab of choc, maple syrup, cookies, cherries and chunks of Epic Mini Bakin' Marshmallows.

You will need

  • 150g Epic Bakin' Marshmallows
  • 180g soft butter
  • 450g choc broken into pieces (milk and dark)
  • 4 tablespoons of maple syrup
  • 300g peanut cookies
  • 200g chopped glacĂ© cherries
  • Clean sandwich bag
  • Greaseproof-lined bakin' tray (approx. 30cm x 20cm, 5cm deep)
  • Some icing sugar
  • A fridge!

    Gently melt together the butter, choc and maple syrup in a saucepan until you've got a smooth, sticky pool of choccy mixture.

    Place cookies into the sandwich bag, seal and bash 'em up with a rolling pin (not too much as you still want some good sized chunks in there!)

    Tip your bashed cookies, chopped glacé cherries and Epic Bakin' Marshmallows into the pan of melted choc and fold into the mixture with a spoon.

    Pour your chunky mixture into the lined tray, using a spatula to spread evenly and gently flatten. Make room in the fridge for your tray of Rocky Road creation and chill for about 2 hours.

    When ready, remove from the fridge, sprinkle with icing sugar, slice into portion sizes as you choose, and serve. Epic!!
